The Best Spring Flavours at the Atlantic

As spring comes into bloom, we’re looking at some of our favourite flavours in our Silks Bistro and Champagne Bar, which uses lots of sumptuous fresh local produce for a truly delicious dining experience.

Broccoli is in season, so why not start off with a warming broccoli and stilton soup, or perhaps enjoy some fresh salt and pepper squid, served with pineapple salsa and onion bhaji. There’s plenty of seafood on offer, from perfectly seared scallops with pork rillettes and a smoked carrot and coral puree, to Newlyn crab cakes served with a lemon and sweet chilli mayonnaise… A delicious way to start spring!

Asparagus is another vegetable in season, so our lightly poached cod with a leek and asparagus butter sauce, crevettes and shredded parsley is a perfect spring choice. Roasted hake loin with pea and salmon risotto make the most of in season peas and the fresh catch of the day!

Not in the mood for a taste of the sea? Pork belly with black pudding bon bons and delicious apple mash finished off with a red wine jus should hit the spot…. or perhaps the roasted vegetable, tomato and goat’s cheese linguini for a seasonal Mediterranean vibe.

Dessert is a sumptuous affair… Why not try the passion fruit posset with mango sorbet to make the most of spring fruits, or perhaps indulge in the dark chocolate tart with Cornish clotted cream and a fresh orange dressing?
