We Meet with Service Legend Fred Sirieix

Hi Fred, so great to meet you! How have you enjoyed your break to Cornwall?

Hi! I’ve enjoyed it a lot thank you, it’s been very relaxing and lovely weather, the people are very friendly here and the staff at the Atlantic have been very hospitable. When you’re in London all you see is buildings so it’s very pleasant to be surrounded by so much greenery and the sea.

 

You’re known for being a top Maitre D’ so we would love to know what, in your opinion, makes for superb restaurant service?

It’s all about paying and giving attention. Pay attention to the details and make people feel special. If you can make sure people are happy, that’s the most important part of great service!

 

When you dine out what is your drink of choice?

It really depends on my mood. I love Champagne, I love Scotch Whisky, I love a glass of wine and I also like a pint of Tribute when I’m in Cornwall, it’s all down to where I am and what I’m doing.

 

What is your advice for anyone looking to get into the restaurant trade?

You must enjoy people and diversity, along with everything that comes with the trade; such as long hours and working weekends! If you like people and you’re willing to work hard then it’s an incredible career because the world really is your oyster, you can work anywhere!

 

We know you’re a big hit on the Channel 4 show ‘First Dates’ and we’ve just launched our very own Romance Break. What is your top tip for a romantic break?

It’s all about either a really great surprise or sense of anticipation and because of that I would say choose your location well. Cornwall is great for romance, you have the beach on your doorstep, you can go for walks, try some surfing and return for a glass of champagne. It really is about making time for one another and taking your phone off the hook!

 

What has been the best bit about staying at the Atlantic Hotel?

Without a doubt the staff. There was always a sense that nothing was too much trouble, everyone was so friendly and very discreet.

 

Lastly, you’ve got quite a big female fan base and you’re renowned for your lovely French accent. How do you say in French “will you marry me?”

Veux-tu m’epouser?
